If you are looking for a super easy Puff Pastry fruit tart to make, we are here for you. This dessert can be made in about an hour.  You can use any type of puff pastry. If you want to make this vegan, you will want to look for a plant based vegan pastry in your freezer section. We used Dufour Plant-based puff pastry dough. Using a pastry brush we used almond milk on the edges of the puff pastry  rather than an egg wash to make this vegan.

Instructions:

  1. Prepare the Puff Pastry: Roll out the puff pastry into a rectangle on parchment paper.
  2. Chill the Pastry: Place the rolled-out pastry in the refrigerator for 15–20 minutes to allow the plant-based butter to re-solidify, ensuring a flaky texture.
  3. Preheat the Oven: While the pastry chills, preheat your oven to the temperature specified on the puff pastry package.
  4. Assemble the Tart: Arrange sliced strawberries and whole blueberries on the chilled pastry, leaving a border around the edges. Sprinkle with sugar and, if desired, add lemon zest or a touch of vanilla extract for extra flavor.
  5. Apply Almond Milk: Using a pastry brush, apply almond milk to the edges of the pastry to promote browning.
  6. Bake the Tart: Bake according to the puff pastry package instructions or until the pastry is golden brown and the fruit is tender.
  7. Cool and Serve: Allow the tart to cool slightly before serving. Enjoy it warm or at room temperature.

Chill the pastry again before baking.

Do not skip the extra chilling step for the best results. Use a rolling pin to roll out a puff pastry rectangle on parchment paper.  Since the pastry sheets are room temperature, you will want to chill itfor 15-20 minutes before you bake it. Pop it in the fridge after working with it, while the oven preheats. This step gives the plant based butter a chance to re-solidify. That is the trick to getting that puff and flaky layers! Tips For Baking With Puff Pastry

Strawberries and blueberries were used in this puff pastry fruit tart for a bright and fresh dessert treat! You can make different flavor variations by swapping out for your favorite fruits. Think about seasonal fruit that is available. This would be great made with apple slices, stone fruit or any fresh berries  that you have on hand. That is the beauty of this tart! How to select the tastiest strawberries:

Color: Look for strawberries that have a deep red color all over. Avoid ones that are mostly white or green, as they are likely underripe.

Texture: Ripe strawberries should be firm and plump. Avoid berries that are mushy or have soft spots, as these are likely overripe or starting to spoil.

Smell: Take a whiff of the strawberries. Ripe strawberries should have a sweet, fruity aroma. If they lack any scent or have a sour smell, they might not be fully ripe.

Size:While size doesn’t necessarily indicate ripeness, larger strawberries tend to be riper compared to smaller ones.

Stem and Leaves:Check the green stems and leaves of the strawberries. They should look fresh, green, and vibrant. Avoid berries with brown or dried-out stems.

Remember that strawberries do not ripen after being picked, so it’s essential to select the ripest ones from the start to enjoy their best flavor and texture. If you plan to store them, refrigerate them and consume them as soon as possible for the best taste.

Before storing, make sure the tart has cooled completely on a wire rack. This helps prevent condensation, which can make the puff pastry soggy.

2. Short-Term Storage (1-2 Days)

If you plan to consume the tart within a day or two, follow these steps:

  • Room Temperature: Store the tart at room temperature. Place it in an airtight container or cover it with plastic wrap to keep it fresh.
  • Avoid Refrigeration: Puff pastry tends to lose its flakiness when refrigerated. However, if the tart has a cream or custard filling, it’s best to refrigerate it.

3. Long-Term Storage (Up to a Week)

For longer storage:

  • Refrigeration: If the tart contains dairy or cream-based fillings, cover it with plastic wrap or place it in an airtight container and refrigerate. Consume within 3-4 days for the best taste and texture.
  • Freezing: To store the tart for up to a week, you can freeze it. Wrap the tart tightly in plastic wrap, then place it in a freezer-safe container or a resealable plastic bag. When ready to eat, thaw the tart in the refrigerator overnight and then warm it up in the oven at a low temperature (around 300°F or 150°C) to restore some of its crispiness.

4. Reheating

  • Room Temperature Tarts: If stored at room temperature, simply uncover and serve.

Ingredients

  • 1 package puff pastry
  • 1 cup strawberries
  • 1 cup blueberries
  • 3 tablespoon raspberry preserves
  • 1 tablespoon almond milk
  • 1 tablespoon course sugar can use regular sugar or turbinado sugar

Instructions

  • Prepare the fruit by rinsing and patting dry. Remove the hulls and quarter the strawberries. Set aside. Place the raspberry preserves in a heat proof glass bowl, and warm slightly on half power for about 30 seconds.
    1 cup strawberries, 1 cup blueberries
  • On a piece of parchment paper, roll out the puff pastry. Using a pastry brush, paint the raspberry preserves lightly onto the puff pastry. Leave a 1 inch frame without the preserves around the outside edge.
    1 package puff pastry, 3 tablespoon raspberry preserves
  • Place the strawberries over the preserves. Add the blueberries over the strawberries to fill in the spaces. Crimp the edges by folding over the crust. Add the remaining preserves over the top.
    1 cup strawberries, 1 cup blueberries, 3 tablespoon raspberry preserves
  • Brush the pastry with almond milk and sprinkle with the course sugar. Also sprinkle some sugar of the top of the fruit. Slide tart on parchment onto a baking sheet pan. Place tart in freezer for 20 minutes to chill. This step is very important, to have your pastry puff up.
    1 tablespoon almond milk, 1 tablespoon course sugar
  • While tart is chilling, pre-heat oven to 400 F.
  • Place tart in oven. Set timer for 10 minutes. At the 10 minute mark, spin tart around and bake for another 20 minutes. Since ovens vary, at 20 minutes, if the pastry is puffed and golden brown, but fruit is not bubbling, cover loosely with a tent of foil. If not yet browned, bake another 10 minutes. Once fruit is bubbling and pastry is golden brown, your tart is ready.
  • Remove from oven and allow to rest for about 10 minutes. Slice into squares and serve warm. This can be served alone or with some dairy free ice cream.
