Ingredients You’ll Need

  • 1 Pie Crust: Unrolled and prepped in a standard pie dish or a removable-bottom quiche pan.

  • 2 Roma Tomatoes: Sliced thick.

  • 1 tsp Sea Salt: Plus extra to taste for drawing out moisture.

  • 6 Large Eggs: Brought to room temperature.

  • ⅔ cup Half-and-Half: (You can also substitute equal parts whole milk and heavy cream for an extra-rich custard).

  • Freshly Ground Black Pepper: To taste.

  • 1 ½ cups Havarti Cheese: Shredded (or swap in parmesan cheese or cheddar cheese).

Step-by-Step Instructions

Step 1: Prep and Salt the Tomatoes

Slice the tomatoes, place them in a single layer on a cutting board, and sprinkle with sea salt. Let them sit for 10–15 minutes. The salt draws out excess water so your crust stays crisp. Gently pat them completely dry with paper towels.

Step 2: Blind Bake the Crust (For the Crispiest Finish!)

To ensure a flaky base, pre-bake your crust. Line the unbaked crust with foil and fill with pie weights (or dried beans). Blind baking for 10–12 minutes prevents the bottom from getting soggy. Remove the weights and parchment, then set the crust aside to cool slightly.

  • Put pie crust in pie pan and poke holes in bottom with fork

  • Slice tomatoes, leave on cutting board and salt

  • Whisk eggs and half and half

  • Add a few grinds of pepper to mixture

  • Mix cheese, into egg mixture
    1 ½ cup Havarti Cheese
  • Pour ½ mixture into cooled crust. Add spinach.
    1 cup fresh spinach
  • Top with tomato slices
  • Bake Quiche 45-50 minutes at 450 degrees turning half way
  • Allow Quiche to cool at least 10 minutes before cutting
