This Caesar dressing is just so easy. We use canned anchovies in ours, but you can purchase the anchovy paste to keep in your fridge to use instead. In about 10 minutes or less you can make this fresh creamy Caesar dressing for your salad.
This creamy Caesar dressing also makes a great dip for veggies! And if you like grilled chicken sandwiches, it is a great addition to those! Grilled chicken Caesar wraps are also a great idea!
Can I store the opened Anchovies that I don’t use in this recipe?
Unopened canned or jarred anchovies have a shelf life of one year. Tightly sealed, opened cans or jars can be stored in the refrigerator for at least two months. We like to make a triple batch of this dressing, which uses up the anchovies.
Can I use anchovy paste in this Caesar dressing recipe?
Opened anchovies can typically be stored in the refrigerator for up to 2 weeks. It’s important to store them properly to maintain their quality and prevent spoilage. After opening the anchovy tin or jar, transfer any remaining anchovies along with their oil to an airtight container or wrap them tightly in plastic wrap. Make sure the container is sealed well to prevent air and moisture from getting in, as exposure to air can cause the anchovies to spoil more quickly. How long can I store Caesar dressing?
That depends on how long your mayo has been in fridge before you made this. Once opened, mayonaaise is good for 2 months in the fridge. If you are using parmesan that is near its expiration date, take that into consideration. The answer is as long as the ingredients used in dressing are fresh. We say for optimum flavor, use within 2 weeks.
We like to serve this creamy Caesar dressing on a grilled chicken salad with roasted walnuts and avocados. The walnuts are a nice alternative to croutons. We make extra and keep it in the fridge to use for salads for lunch through out the week.
Did the original Caesar salad have Anchovies?
Historians believe that the original Caesar salad was made by Caesar Cardini in 1924. The original salad is said to have been made table-side with romaine lettuce and croutons covered in a dressing made of garlic, Parmesan cheese, olive oil, boiled eggs and Worcestershire sauce. It wasn’t until 1926 when Caesar’s brother, Alex Cardini, added anchovies. So, I guess we should call this Alex dressing!
Can I substitue Worcestershire for the Anchovies?
You can add one to two teaspoons of Worcestershire sauce as a substitute for anchovies while still achieving the desired faint “fishy” flavor if you can not find anchovies. Since Worcestershire sauce is made with anchovies, it is a suitable substitution.

Ingredients for Creamy Caesar Dressing
- 2 cloves garlic
- ½ juiced lemon
- 1 tbls Dijon mustard
- 2 teaspoon Worcestershire sauce
- 1 cup mayonnaise
- 1/3 cup olive oil
- 1/2 cup shredded Parmesan cheese
- 4 anchovy filets
- 6 grinds fresh ground black pepper
Instructions
- Finely dice anchovies and add to bowl. Using a grater, shred garlic into bowl. Add remaining ingredients, and whisk together until creamy.
- Store the dressing in a jar in the refrigerator. We use a small mason jar. Lasts up to 2 weeks.
