There’s nothing quite like pizza night made from scratch, especially when it starts with our favorite homemade pizza dough recipe! This chicken sausage pizza is simple, flavorful, and baked at a high temperature for a crisp yet chewy pizza crust. With garlic oil instead of traditional tomato sauce or pizza sauce, seasoned just right with our pizza seasoning, every bite highlights the quality of the ingredients.

Ingredients for Spicy Italian Chicken Sausage Pizza:

  • Homemade pizza dough – The foundation of the pizza. Letting the dough balls come to room temperature makes the dough easier to roll thin and bake evenly.

  • Semolina flour – Lightly dusted on the pizza peel so the dough slides easily onto the stone without sticking. If you do not have this, corn meal will work!

  • Garlic oil – Acts as the base instead of pizza sauce, adding flavor while keeping the crust crisp. Made 

  • Spicy Italian chicken sausage – Our protein of choice. We buy ours from Whole Foods, where the quality and seasoning are consistently excellent. Brown it first for maximum flavor.

  • Cherry tomatoes – A nice pop of fresh flavor of tomatoes, instead of sauce.
  • Mozzarella cheese (freshly shredded) – Melts smoothly and ties all the toppings together.

  • Red onion – Thinly sliced for bite, color, and a touch of natural sweetness (plus a little vitamin C).

  • Pizza seasoning – Adds classic pizzeria flavor throughout the pizza.

  • Red pepper flakes (optional) – Perfect if you want a little extra heat.

  • Fresh Arugula (optional) – A bright, fresh finish sprinkled on after baking.

How to Make the Pizza

Roll the dough thin using a rolling pin and place it on a semolina-dusted pizza peel. Brush the surface with garlic oil, then sprinkle lightly with pizza seasoning. Top with shredded mozzarella cheese, browned chicken sausage, and red onion, spreading everything evenly across the top of the pizza.

Slide the pizza onto a preheated pizza stone in a 500-degree oven and bake until the crust is golden and the cheese is bubbling. If you don’t have a stone, a pizza pan, baking sheet, or sheet pan works too—just note the crust may be slightly softer.

How to Store Leftover Pizza

Allow leftover pizza to cool completely, then store slices in an airtight container using parchment paper between the slices to keep them from sticking. Keep in fridge for 3-4 days. 

Best Ways to Reheat Pizza

  • Oven: Reheat at 375°F directly on the rack or on a pizza pan until warmed through.

  • Cast iron skillet: One of our favorite methods. Heat slices in a cast iron skillet over medium-low heat to crisp the bottom while melting the cheese.

  • Avoid the microwave if possible—it softens the crust and loses that fresh-baked texture.

Ingredients

  • 1 link Spicy Italian chicken sausage
  • .25 Red onion
  • .25 cup Cherry Tomatoes
  • 1 ball Homemade pizza dough
  • 2 tbsp Semolina flour
  • 1 tbsp Garlic oil
  • 1 tbsp Pizza seasoning
  • 1 cup Mozzarella cheese
  • .5 tsp Red pepper flakes optional if you like heat
  • .25 cup Arugula optional

Instructions

  • Brown the Italian chicken sausage in a pan. Set aside on paper towel on a plate.

  • Slice about a quarter of an onion into thin slices.

  • Slice the cherry tomatoes in half.

  • Roll the dough thin using a rolling pin and place it on a semolina-dusted pizza peel.
    1 ball Homemade pizza dough, 2 tbsp Semolina flour
  • Brush the surface with garlic oil, then sprinkle lightly with pizza seasoning.
    1 tbsp Garlic oil, 1 tbsp Pizza seasoning
  • Top with shredded mozzarella cheese, browned chicken sausage, and red onion, & halved cherry tomatoes, spreading everything evenly across the top of the pizza.
    .25 Red onion, 1 cup Mozzarella cheese, .25 cup Cherry Tomatoes
  • Slide the pizza onto a preheated pizza stone in a 500-degree oven and bake until the crust is golden and the cheese is bubbling. If you don’t have a stone, a pizza pan, baking sheet, or sheet pan works too—just note the crust may be slightly softer.
  • Slice the pizza, and top with fresh arugula. Serve.
