We have the best Southern Peach Crisp Crumble Recipe made with Oats! This is made with fresh ripe Pearson Farm summer peaches, but you can also make it with frozen or canned peaches. We use brown sugar, butter and oatmeal in our crumble crust that forms a crunchy topping over the peachy goodness.
This peach pie crumble does not have a crust. Not only does this save time, but you won’t even miss it! The brown sugar, butter, and rolled oats create a crunchy topping that is so flavorful. We like it even better than pie crust!
Of course you are gonna want to serve this peach pie crumble slightly warm with vanilla ice cream. If you have the time to make the ice cream from scratch, it is totally worth it. Store bought will do just fine, though!

No-Fuss Peach Prep: Leaving the skins on the peaches saves time and adds beautiful texture and color.
-
Old-School Crumble Method: Cutting cold butter into flour makes a rich, tender, and crumbly topping that bakes up perfectly golden.
-
Layered Flavor: Warm cinnamon and ginger bring out the natural sweetness of the fruit, with just enough lemon to brighten the filling.
What you will need to make this Peach Crisp Crumble:
Topping Ingredients (Crisp/Crumble)
-
Butter
Provides richness and helps the topping become golden and crisp as it bakes. It binds the dry ingredients together. -
Brown Sugar
Adds sweetness with a hint of molasses flavor. It caramelizes during baking, enhancing the crisp texture and depth of flavor. -
Old Fashioned Rolled Oats
Give the topping its signature chewy-crisp texture. They also add a bit of heartiness and structure. -
Cinnamon
A warm spice that pairs beautifully with peaches and adds classic Southern flavor. -
Ground Ginger
Adds a subtle warmth and spice that balances the sweetness and brightens the overall flavor. -
Salt
Enhances all the other flavors and keeps the crumble from tasting flat.
Filling Ingredients
-
Peaches
The star ingredient—juicy, sweet, and slightly tart, they soften and caramelize when baked, creating a syrupy base. -
Flour
Helps slightly thicken the peach juices so the filling isn’t too runny. -
Sugar
Sweetens the fruit, especially if the peaches aren’t overly ripe. It also helps create a glossy finish when baked. -
Lemon
Adds brightness and acidity, which balances the sweetness and prevents the dessert from being too heavy. -
Cornstarch
A key thickener that works with the flour to create a luscious, cohesive filling.
