Spicy Chicken Sausage Rigatoni with Sundried Tomatoes

We’ve got to admit that this Spicy Chicken Sausage Rigatoni recipe is one of our favorite pasta dishes! It is a perfect balance of spicy sausage, creamy sauce, and savory vegetables. With fresh spinach, sun-dried tomatoes, and white wine all working together to elevate the dish, it’s one of those pasta recipes that feels both comforting and special. Our favorite way to make Italian recipes is to grab a few fresh ingredients from the grocery store and create a creamy pasta!

  • Canola Oil
    A neutral cooking fat used to sauté the sausage and onion without overpowering the other flavors.

    Adds sweetness and slight sharpness; the shape gives nice texture and visual appeal.

  • Dry White Wine
    Deglazes the pan and builds complexity in the sauce by adding acidity and brightness.

  • Roasted or Sundried Tomatoes

How to make Spicy Chicken Sausage Rigatoni:

  1. Boil a large pot of salted water.

  2. Remove casing from the sausage. Heat oil in a shallow pan over medium heat.

  3. In a large skillet, cook sausage over a medium-high heat, till golden brown, and cooked thru, breaking it into small bite-size pieces.

  4. Transfer cooked sausage to a bowl and cover with foil.

  5. Boil pasta according to package instructions and cook time until al dente.

  6. Deglaze the pan with white wine, scraping up any browned sausage bits off the bottom of the pan.  Let the wine reduce.

  7. Add butter and red onion to the pan. Cook for 2 minutes.

  8. Add roasted tomatoes and cook for 3–4 more minutes.

  9. Once the pasta is nearly done, add heavy cream and Parmesan cheese to the pan. Stir and let the cheese melt over low heat.

  10. Add in the chopped spinach and cooked rigatoni. Toss everything to coat well.

  11. Turn off the heat and allow the pasta to rest in the sauce for 2 minutes before serving.

  12. Serve in bowls, topping with fresh parsley or basil, if you would like. 

How to Store Leftovers:

Let the pasta cool completely before storing it in an airtight container. Refrigerate for up to 3 days. Reheat gently on the stove or in the microwave with a splash of cream or water to loosen the sauce.

Substitutions:

  • Sausage: You can use mild chicken sausage or even pork Italian sausage if preferred.

  • Wine: Replace with low-sodium chicken broth if you don’t want to use wine.

  • Heavy Cream: Half-and-half works in a pinch, though the sauce may be a bit thinner.

Ingredients

  • 2 tablespoons salt for pasta water
  • 2 links spicy chicken Italian sausage
  • 1 tablespoon canola oil
  • 8 ounces rigatoni half a box
  • ⅓ cup dry white wine
  • 3 tablespoons salted butter sliced into equal pieces
  • ½ red onion sliced lengthwise
  • ⅓ cup roasted or sun dried tomatoes diced fine
  • ¼ cup heavy cream
  • ⅔ cup fresh grated parmesan cheese
  • 2 cups fresh spinach stems removed and chopped

Instructions

  • Boil water for the pasta. Salt the water liberally.

  • Remove casing from sausage. Heat one tablespoon canola oil in a shallow pan. Place the sausage in the pan and cook through, Break up the sausage as it is cooking, so that it is in smaller bite site size pieces. remove the sausage from the pan to a bowl and cover with foil.

  • Boil the pasta according to the package directions.
    8 ounces rigatoni
  • Pour the white wine into the pan and scape and remaining sausage bits off the pan. When the wine is mostly reduced down, add in the butter and slice onion. Cook for 2 minutes
    ⅓ cup dry white wine, ½ red onion, 3 tablespoons salted butter
  • Add in the chopped tomatoes. Cook for 3-4 more minutes.
    ⅓ cup roasted or sun dried tomatoes
  • When the pasta is almost ready, add the cream and parmesan cheese. Reduce the heat to a simmer and stir until the parmesan is melted. Toss in the spinach and pasta. Stir until the pasta is well-coated.
    ¼ cup heavy cream, ⅔ cup fresh grated parmesan cheese
  • Turn off the heat and allow the pasta to rest in the sauce for 2 minutes.
