This blueberry simple syrup recipe is a versatile and flavorful addition to various beverages and desserts. It is a great way to use up ripe blueberries, to extend the life of the fruit. It can also be made with frozen blueberries! The standard simple syrup recipe is equal parts water mixed with granulated sugar, and brought to a boil. We use a heavier ratio of water for a thinner syrup. A thicker syrup is perfect to serve over pancakes or french toast, but a thinner syrup works well in iced tea, a blueberry margarita and so many more cold drinks.
Ingredients for Blueberry Simple Syrup:
- Sugar (2 cups): Acts as the sweetening agent and helps preserve the syrup.
- Water (2½ cups): Serves as the base to dissolve the sugar and extract flavors from the blueberries.
- Fresh Blueberries (3 cups): Provide a natural, fruity flavor and vibrant color to the syrup.
How to Make Blueberry Simple Syrup:
- Combine Sugar and Water: In a small saucepan stir together the sugar and water until the sugar dissolves.
- Add Blueberries: Introduce the blueberries into the mixture.
- Boil the Mixture: Bring the mixture to a gentle boil then reduce to a low heat for a gentle simmer for 5 minutes.
- Mash the fruit: Using a potato masher, or the back of a wooden spoon, push out the fruit from the berries.
- Cool and Strain: Remove from heat and allow the syrup to cool. Strain the syrup through a fine mesh sieve into a large container with a spout, such as a Pyrex.
- Bottle the Syrup: Ensure the syrup is completely cool before pouring it into glass bottles. Seal them tightly.
Note: The strained blueberries can be repurposed as a spread on toast.
Storage Instructions:
Store the bottled blueberry simple syrup in the refrigerator. It keeps well for a couple weeks. Adding a few drops of vodka can extend the life another week or 2.

Ingredients
- 2 cups sugar
- 2½ cups water
- 3 Cups fresh blueberries
Instructions
- Place sugar and water into pot, and stir.2 cups sugar, 2½ cups water

- Bring mixture to a boil. Reduce heat to medium, so that it does not boil over.
- Let boil for 5 minutes. Using the back of a silicone or wooden spoon, press out the blueberries.
- Remove from heat, allow to cool.
- Strain syrup into a large container with a spout, such as a heat-proof Pyrex bowl with spout and handle.
- We keep the fruit strained out to spread on toast.
- Before bottling, be sure syrup is completely cool
- Pour syrup into glass bottles.
- Add a few drops of vodka into the syrup to preserve the syrup a little longer. (optional)
- Store in refrigerator up to 2 weeks.
